Savory Chickenless Salad

Wow. We had some technical difficulties today. Yesterday, the neighborhood landscapers accidentally cut our internet cord – yikes! No internet. No blogs. Lots of time spent at a coffee shop. Which needed up being more social than work driven. So this one is getting out a little late today.  Hopefully, you will be able to use it to make a quick and tasty lunch for your Friday or your weekend. I have been eating this one quite often lately, not only because it’s delicious, but because it’s super easy!

Savory Chickenless Salad

1 can chickpeas, rinsed and drained

1-2 tbsp vegenaise

1/8 onion, chopped

1 celery stalk, chopped

1-2 tsp dried dill weed

1 tsp garlic powder

Sea salt to taste

Handful mixed greens

1 tomato

Place the chickpeas in a blender/processor. Pulse until mashed slightly, but not fully blended. Ina bowl, add chickpeas, onions, celery, vegenaise, and spices. Mix well. Slice the top off of the tomato. Hollow it out. Scoop in the “chicken” salad.

Eat. Enjoy. Smile. Repeat.
