DIY Blueberry Ice Cream

Blueberry Vegan Ice CreamWhen it gets warm out, I start to crave two things fresh berries and ice cream.  Or better yet a combination of the two with a healthy, vegan twist. This is so simple- I couldn’t believe I hadn’t tried it before. All those years without a decent ice cream, and here I had the tools to make it all along. It’s like Dorothy and those high heels – I had the power within me all along!

All you need is three simple ingredients: vegan creamer (soy or coconut work best), frozen blueberries, and agave (if you even need it!)

Vegan Blueberry Ice Cream:

1 cup blueberries, frozen

¼ cup creamer

Agave or sugar to taste

Add all ingredients to a blender. Blend until thick and scoopable, but not chunky, like ice cream. Add more blueberries or creamer to reach desired consistency. Taste and blend with sweetener if needed, it all depends on your taste buds and the blueberries!

    Ly and I made blueberry ice cream a few weeks ago. We went the frozen banana and frozen blueberries route but it was still good. We took the blender into Levi’s room because he was sleeping in the living room and we didn’t want to wake him up. Ly made it by herself. She hit the buttons on the blender then went and hid behind the rocking chair because the noise scared her.
