Vegan Overnight Oats

I had forgotten all about these. I was reading a post over at Oh She Glows the other day and it reminded me how long it had been since I’d made oatmeal – in the fridge, overnight.

I used to make it when I would have to get up and go to work early. And since that’s what happens onWednesday mornings, and I was teaching more classes than normal, I knew I would need something substantial again this week. Usually, I stick to juices or smoothies, but I was starving this week, so I went with something a little more solid.

The usual recipes call for bananas, but I left them out and opted instead for super seeds and oats.

Vanilla Vegan Overnight Oats:

1/2 cup oats

1tsp ground flax seeds

1tsp chia seeds

1 tsp hemp seeds

1 cup (approximately) Vanilla coconut milk (or any that you choose)

Place all dry ingredients in a mason jar. Add milk until it alomst fills the jar. Stir together. Don’t worry if it seems thin, it will thicken up fast! Place in fridge with lid on overnight.

In the morning, open, grab a spoon, and enjoy! I suggest adding blackberries for extra tasty fun!
