Vegan Stuffed Shells

I was googling some writing stuff the other day and somehow stumbled upon an old post in a food blog I sometimes read, which happened to mention Vegan Stuffed Shells. I believe that is commonly referred to as luck πŸ™‚ I looked into the original article, made a few tweaks, made the shells, and fell in love.

We ate them all. In one dinner. The whole box.

Yup. That good.

I’ll give you the brief recipe today, but the ricotta cheese will have to wait until tomorrow for DIY Friday (sneaky, eh?)

Vegan Stuffed Shells

This is one of those simple pull-the-ingredients-out-and-put-it-all-together-but-it-looks-really-fancy-type meals

1 box of (gluten free) shells – regular not jumbo

1 jar organic pasta sauce, or feel free to whip up your own if you know a good recipe

1 serving vegan ricotta – recipe to come tomorrow!

 

Preheat oven to 350 degrees. Boil water and cook pasta according to directions. Make ricotta. Stuff shells with ricotta. Place in casserole dish. Cover with sauce – as much as you’d like. Bake in oven for 15-20 minutes. Commence eating the entire dish. Share if you dare πŸ˜‰
