Black Bean and Sweet Potato Wrap

Have you ever needed a picture and realized you only had a second to take it, so no matter what, you knew it wasn’t going to come out pretty? That’s where this picture came from…Black Bean Sweet Potato Wrap

Yuck. And this was after some sprucing it up a bit.

I was running short on time and threw this together, snapped a pic (it was raining so the lighting was t-e-r-r-i-b-l-e), and this is what we have now.

Luckily, it tastes way better than it looks 😉

Black Bean and Sweet Potato Wrap:

Make enough for two servings or wraps

1-2 sweet potatoes, steamed and cut into chunks

1 can of black beans, drained and rinsed

2 big handfuls of spinach, chopped

chili powder, garlic powder, cayenne, cumin, curry powder, and sea salt to taste

Steam the sweet potatoes until cooked thoroughly (I did this ahead of time). Heat black beans. Mix sweet potatoes, spices, spinach, and spices together in a saute pan until blended together and the spinach is wilted. The spicy curry and cumin mix blend well with the hot cayenne and chili AND with the sweetness of the potatoes. Eat as is, over rice, or in a wrap.

Serve it up and enjoy! It’s pretty simple. The hardest part is chopping and steaming the sweet potatoes.
