DIY: Vanilla Soft Serve

I have a weakness for Fro-Yo (Frozen yogurt).  But I don;t eat yogurt. So there is the dilemma. There is one Fro-Yo shop across Charleston that serves soy fro-yo, but it is about 40 minutes away. Not really possible on a Tuesday night at about 9:30 when you are overheated and really craving some delicious soft serve ice cream.

What’s a plant-based girl to do?

Make it herself. And make it even healthier. With whole foods and simple ingredients.

Vanilla Soft Serve

DIY Vanilla Soft Serve:

This is by far the creamiest, dreamiest version I’ve made yet! It makes 2 large servings. 

3-4 frozen bananas

2-3 tbsp vanilla coconut milk (note* you can also use unsweetened or plain, just add in vanilla extract and sweetener if desired)

Optional – chocolate chips

Add bananas to the blender. Blend for about 30 seconds. Scrape the sides and add 1-2 tbsp of coconut milk. Blend again. If needed, add more coconut milk. It should be thick and whipped, like soft serve ice cream or frozen yogurt. If desired throw in a few chocolate chips and blend again.

Scoop into two bowls (if you dare to share!) and top with a few chocolatey morsels of goodness.

Eat right away before it melts! Enjoy and make again soon!
