Almond Butter Chocolate Protein Bars

AB Protein Bars? I knew that would get your attention. Want to know something even more awesome? These are gluten and grain free, which means absolutely no flour. But they have the texture of a brownie. AND they have a super delicious, superfood to give you a little energy boost.

These are so good, they are already gone.I ate almost the whole tray. The hubby only got one! (with a bite taken out of it ๐Ÿ™‚ ) And I’m craving more. Who wouldn’t want more almond butter and chocolate?

And actually – peanut butter would work quite well for this too. If you want to keep it a little more traditional. But not Jiffy or Skip, I’m talking real, no ingredient added PB.

So what are the secret weapons in this protein powerhouse?

Nut butter, maca root, and chickpeas. Yup. Chickpeas.

Almond Butter Chocolate Protein Bars:

Makes about 6-8 large bars

1 cup almond (or other natural nut) butter

1 can chickpeas, drained and rinsed

2 tbsp ground flax-seed with 4 tbsp water (for flax eggs)

1/3 cup agave

2-3 tbsp maca root powder

1/2 tsp baking soda

1 tsp vanilla

1/2 cup chips

coconut oil to grease your pan

Preheat oven to 350 degrees. Grease a casserole pan with coconut oil. Add the remaining ingredients, except chocolate chips, to the blender/processor. ย Process until smooth and thick, like brownie batter. Stir in chocolate chips. Spread into pan. This is a SUPER thick batter, so use your spatula to help spread it. Bake for 30 minutes or until a toothpick, inserted in the center, comes out clean.

Let cool for 10-15 minutes. Cut into 6-8 squares and enjoy! Eat for breakfast, after workout snack, dessert, etc.

      Hi! Thanks for the question. Maca root is an ancient root used by incancs, mayans, and aztecs to enhance energy, libido, fertility, and overall endocrine function. Today we can use it for all fo these things as well, since we often let our energy levels drop and see so many endocrine imbalances. Mostly, it’s used in a powdered form or capsules. You can always leave it out of the recipe though!
