Peachy Keen Ice Cream

It’s definitely summertime, because I am on a mission to stay cool. The pool and beach have been calling my name – not so much to lay in the sun, but to swim and soak in the water. I’ve been craving coconut water and a nightly yin yoga session to cool my body.

And most importantly, ice cream.

Between Vanilla Soft Serve and Ice Cream Sandwiches, you’d think I’d be set. But then I saw some frozen peaches, and thought – Yes! Peach Ice Cream.

And so here we are.

Peach Ice Cream

Peachy Keen Ice Cream:

Makes 2-3 servings, depending on your portions, which can be stored in the freezer until ready to use. Just let it thaw for about 5 minutes so you can scoop it out. 

1-2 cups frozen peaches (bought frozen or you can freeze your own)

1/2-1 cup vanilla coconut milk

1 tsp vanilla

1 tsp agave

Blend all ingredients until smooth but thick. You want this thicker than a smoothie. Much thicker. Place into freezer for 10 minutes to firm up a bit more. Scoop, maybe top with some frozen blueberries, and serve. Oh so good! You can place any leftovers in the freezer until you are ready for them.
