Superfood Chocolate Protein Bars

It feels so good to officially be back!

I have missed writing, cooking, and creating these past few weeks. But I did have a fantastic vacation – an even found some creative sparks towards some new programs and recipes for you!

For now, I’ll share with you one of the key snacks/recipes from our vacation. Superfood Chocolate Protein Bars. These yummy bars helped us ward off hunger on our car trip and keep us energized for the hike back down a mountain. And my nephew loved them – and he didn’t even realize they were good for him! Satisfying, energizing, and kid-friendly. Win-win-win.

These protein bars are similar to a Cliff bar in taste (but not chalky at all) and just as filling. And they are absolutely no bake. Just mix, refrigerate, and eat.

They are also full of sneaky superfoods – like spirulina, flax seed, and chia seeds. But you would never know. They just taste chocolately. The protein source is from the spirulina, almond butter, and oatmeal. The chocolate is from, well, cocoa 🙂

Superfood Chocolate Protein Bars

Superfood Chocolate Protein Bars:

Makes approximately 10 bars, give or take a  few depending in your cutting size.

1/4 cup dark chocolate powder

1/2 cup ground flax seed

2 tbsp chia seed

1/2 tsp spirulina

1/2 cup almond butter

2 1/2 cups oatmeal, blended

1/2 cup agave nectar (or natural sweetener of choice)

3/4 cup hot water

Blend oatmeal until it is almost flour-like in consistency, but still a bit chunky. Mix all ingredients, except water, together in a bowl. You may need to get in there with your hands to really incorporate it all together. Slowly add water in small amounts. You want your mixture slightly wet so it can clump together, but not runny.

In a parchment paper-lined casserole dish, spread your mixture out evenly. Refrigerate for 1 hour. Cut into 10 bars or any other shape you would like. Keep refrigerated until ready to eat. These make a great breakfast,  post-workout snack, or even a little meal on the go with a nice fresh juice.
