Vegan Nachos

Yup, that’s right,. Every now and then, you need a little grub, Even vegans! But if you do it right, you can keep it healthy AND have it grub-worthy.

Makes approximately 2 servings

Cheddar Daiya Cheese

1 can black beans, rinsed and drained

Cayenne pepper, chili powder, garlic powder, sea salt and nutritional yeast to taste

2 brown rice wraps

guacamole or avocado

cashew cream sauce

black olives, chopped

2 Roma tomatoes, chopped

2 tbsp onions (red or sweet), diced

2 leaves of romaine lettuce, chopped

Cut brown rice wraps into 8 triangles, like you are slicing a pizza. Place on a cookie sheet and pop in to the oven at 350 degrees to crisp up. The will be slightly brown and very chip-like.  Usually 5-10 minutes, depending on your oven and the amount of crispness.

While those bake, prepare your cream sauce. Soak 2 tbsp raw cashews in water for 5 minutes. Place the cashews in a blender and add 1-2 tbsp water. Squeeze half a lemon into the blender. Blend until smooth and the consistency of sour cream.

Drain and rinse the black beans. Heat them with the seasonings, adding as much as tastes good for you. If it gets really thick, you can also add a little water.

Chop all veggies. Take chips out of the oven and place in two oven safe dishes, I used pie plates. Top with Daiya cheese and beans. Place back in the oven for 2-3 minutes.

Remove from oven, transfer to your eating plates, and add toppings.

Eat, enjoy, and repeat soon!
