No-Guilt Mac and Cheese

Yesterday, I was in need of some major comfort food. Nothing major, just feeling incredibly hungry, a little tired, and had a case of the sniffles. Add to that the fact that I was once again out of food in my pantry – where does it keep going? – and all I could find was a box of pasta, nutritional yeast, and some spices. So I put it together and made the ooey gooeyiest Mac and Cheese I’ve ever tasted. Yum.

Yup, that’s right. This is comfort food you don;t have to feel guilty about. Pair it with a handful of mixed greens and you;ve got one heck of a meal!

No-Guilt Mac and Cheese:

Makes 2-4 servings, depending on your hunger size 🙂 And honestly, the “worst” thing in here is the Daiya cheese, so forks up! And enjoy! 

1 box quinoa pasta (I used spirally noodles and the quinoa gives you and extra – gluten free- boost of protein)

1/4 cup water

3/4 cup nutritional yeast aka cheezy flakes

1-2 tsp earth balance “butter”

1/2 package shredded daiya cheddar cheese

garlic powder to taste

sea salt to taste

Boil water and cook pasta according to package directions. Drain and rinse. Add back to stove on low heat/simmer. Add water, nutritional yeast, garlic powder, and sea salt. Stir together. Add in the “butter” and daiya cheese. Stir some more. It should become pretty sticky and coat the pasta noodles.

Once stirred and melted, spoon it up and enjoy! Savor each delicious, comforting, guilt-free bite. You know you deserve it!
