Kale and Tomatoes

Well, the 21-Day Detox is in full-swing! Which means lots of folks are going to be eating green and clean, and loving life for the next 21-Days…and beyond 🙂

The cleanse consists of lots of leafy greens, veggies, fruits, whole grains, nuts, seeds, and beans to get you back on track with your diet and health.

In honor of the 21-Day Detox, I thought I’d post a recipe that the detoxers can sue, but also for all of you that are curious what you can eat while on a cleanse. I absolutely love cleanses like this one – there is only one day of “strict” juicing/blending to kickstart your detox and the rest of the time you are eating REAL food and learning to take care of YOU.

One of the best real foods to eat. Kale. Per bite, Kale has one of the highest rates of nutrients. Which means that each bite of kale gives more vitamins and minerals than most other foods.

And it can be quite tasty and versatile. Juice it, blend it, eat it raw in a salad with a nice hearty dressing, or simply saute it, as it is in this recipe.

Kale and Tomatoes

I love pairing kale with tomato. It gives it a little juiciness and a little burst of brightness.

2 cups kale, chopped and stems removed

1/2 cup cherry or grape tomatoes, cut in half

1 -2 tsp olive oil (in pan)

1 tsp nutritional yeast, sprinkled

garlic powder, sea salt, and turmeric to taste

Heat olive oil in your pan over high heat. Reduce to medium heat and add your kale. Toss gently. After 1 minute, add you tomatoes and seasonings. Continue cooking for 1-2 more minutes.

Serve with your favorite whole, gluten-free grains and enjoy!
