Avocado Toast

I feel like I have been MIA this whole week, but I promise, I’m not ignoring you. We have been busy moving – just across town – but packing up an entire house with just two people and making several trips. Needless to say, cooking and recipe testing hasn’t been a huge priority. We have been eating most meals out or on the go, since everything has been boxed up or the fridge was emptied.
Somehow though, we managed to eat breakfast at home everyday. Sometimes a juice, but more often than not, we needed something a bit more substantial to go with it. ON most days, we made some toast and topped it with avocado. It;s really as simple as that.
We use Sprouted grain bread, as it is easier to digest for people who have sensitivities (not allergies or Celiac’s Disease) to gluten and wheat. These seeds were sprouted with releases digestive enzymes that keep your digestive system on track when you eat them. They also contain more protein than most bread. Avocado has plenty of healthy fat, which helps to keep you full longer, as well as absorb more of the nutrients in your juice.
There is no real recipe needed. Simply toast your bread. Slice half an avocado and place the slices on your bread. If you’re feeling really adventurous, sprinkle some nutritional yeast on there as well 😉
