Tofu Scramble Burrito

When I went to bed on Saturday night, all I could think of was “Man, I really want to go out to breakfast tomorrow”. But in our town, the majority of places are limited to eggs, bacon, and biscuits – three strikes, they’re out. And I didn’t feel like heading into Charleston in the morning, so I went for a run and cooked up some yummy, breakfast wraps…that immediately fell apart but were still absolutely delicious. Brown rice wraps can be so fragile sometimes!

For the main ingredients of this scramble, I used tofu. I’ve been trying to cut back on soy for a variety of reasons – hormones, bloating, overall sluggishness, but once or twice a week we do have soy in a less processes state aka tofu or tempeh (or sometimes soymilk if I’m really cravings a latte!).  And this was definitely worth a soy-based splurge!

Tofu Scramble Burrito

Breakfast Tofu Scramble Wraps:

1/2 package of firm tofu, pressed and drained

1 cup nutritional yeast

2 tsp turmeric

1 tsp curry powder

1/2 cup vegetable broth (or water)

2 cloves garlic, minced

1 small onion, chopped

2 celery stalks, chopped

2 green onions, chopped

1 small orange bell pepper, chopped

1 handful of kale greens, chopped (I used my blender!)

1 avocado, sliced

1-2 tsp garlic powder

1/4 tsp sea salt

1 tbsp olive oil for your pan

2 brown rice wraps

Heat your 3/4 of your olive oil  in you pan on high heat. Turn to medium-high and add you onions, garlic, and celery. Saute until they become almost transparent. Add your peppers and green onions. Cook for 2 more minutes. Crumble your tofu in to the pan. Add your spices, nutritional yeast, and vegetable broth. Stir to incorporate it all together. Then add in your kale greens. Cook for 1 to 2 more minutes, until the tofu is warm. While this is cooking, heat up the rest of your olive oil in an additional pan. Place your wraps, one at a time,  in the pan to warm.

Place half of your scramble in a wrap, top it with tofu and roll it up. Repeat with the second wrap. Eat – with or without a fork if necessary! – and enjoy!

We enjoyed ours outside on our patio, with organic, local coffee, cool breezes, and lots of sunshine.
