Frozen, Frosted Energy Balls

Take two recipes, combine them, stick them in the freezer, and you have a fantastic frozen treat!

I have been waiting and waiting to share this one with you, but I wanted to wait until the second part (out of three) was featured on MindBodyGreen!

This recipe combines Energy Balls, strawberry cream cheese, and your freezer for an ice cream cake-pop style treat.

Frozen Frosted Energy Balls

Frosted, Frozen Energy Balls:

This recipe contains three steps.

1) Make Energy Balls 

2/3 cup cashews

¾ cup almond flour or meal (previously used with oats)

Pinch of Himalayan Sea Salt

7 pitted dates, chopped

1 tsp pure vanilla extract

4 tbsp agave nectar

1 tbsp molasses

3-4 tbsp dark chocolate (chips or chunks)

Mix cashews and almond flour/meal together in a food processor. Combine until flour-like in texture.  Add salt and dates, mix for 1 minute. Add vanilla, agave, and molasses. Mix until the dough becomes sticky and almost combined together. Add in chocolate and process for 10 seconds. Scoop with hands and roll into small dough balls. Place on a greased tray or parchment paper. Place in freezer for one hour and enjoy!

2) Make Frosting aka Cream Cheese

3) Dip the energy ball in the frosting and place on a tray.

Repeat with entire batch. Pop the tray in to the freezer for at least one hour. When you are ready to eat, simply grab n go! Depending on how solid you like you frozen treats, you may want to let it sit for a couple of minutes.
