Energy Ball Cookies

Mmmmm my house smells like cookies. And it’s also my 29th birthday. Perfect combination 😉

In celebration of my 29th birthday, I thought I’d share with you some outtakes from my #100days100poses pics this morning. I felt super motivated yesterday in Bird’s of Paradise, BUT today I ran into a few glitches, scrapped it, and tried something else.

I never, ever thought that I would be able to do this balance. It always seemed like a pose that was for “cool yogis” who had no fears, no tight muscles, and background in gymnastics. But then I learned they are really all about the core and how you stack your bones. For year 29, I hope to keeping growing my practice beyond what I think is possible 🙂

Now back to the cookies…

On the suggestion of a friend (and fellow blogger at Yogaddiction), I turned my go-to energy balls into simple, healthy and delicious cookies.

Best. Idea. Ever.

I made some energy balls, popped them in the oven and had cookies in less than 20 minutes! They were so good that we demolished them in two days and currently have two more batches cooking up right now!

For this recipe, I actually added in a few more ingredients than my original Energy Ball recipe. Enjoy!

Cranberry cookies

Chocolate Cranberry Energy Ball Cookies:

2 tbsp chia seeds with 4 tbsp water

1/2 pound raw cashews

1 tsp coconut oil

1/4 cup dried cranberries

1/8 cup dark chocolate pieces/chips

1-2 tbsp maple syrup

1 tsp pure vanilla extract

Preheat oven to 350 degrees. Spread a thin layer of coconut oil on your cookie trays. Blend 1/2 of the cashews in a blender until flour-like. Add in the rest of the cashews and pulse until blended together, but still a little chunky. Add all other ingredients except the chocolate and cranberries to the blender.  Blend until combined. Mix in the chocolates and cranberries.  Form into round balls, place on a cookie tray, and press them flat. Bake for 20 minutes.

Eat. Smile. Repeat.
