DIY: Cashew Mint Energy Balls

Even when it’s a little chilly out, I still love a good frozen energy ball – especially when it’s minty fresh. If it’s hot, the mint helps to cool me down. When it’s chilly, it makes me think of crisp breezes and snow! And I enjoy any reason to cozy up with a good blanket πŸ™‚

These are simple, with minimal ingredients, and are absolutely delicious. They are great on a hot day, but would be great to play with for any upcoming holiday parties – after all, they are right around the corner, yikes!

Cashew Mint Balls

Cashew Mint Energy Balls:

1 cup raw cashews

1 tsp peppermint extract

1/4 tsp sea salt

1/2 cup agave/natural liquid sweetener (or honey if you use it)

1/4 cup shredded coconut to garnish

coconut oil on freezer pan, or parchment paper

Blend the cashew sin your blender or food processor until they are flour-like in consistency. Add in the other ingredients, minus the coconut, and blend. Roll into small balls (makes about 10), then roll in the coconut shreds. Place on pan (lined with parchment paper or coconut oil) and freeze for at least one hour.
