The Perfect Pesto

Over the weekend I was given the most amazing gift – a basil plant. Well, more accurately, a basil bush.

This thing is HUGE! I am going to be eating basil for months. 

Life is hard 😉

After weekend of family, world cup, friends, and laziness, fresh foods were in order. The perfect opportunity to use some of my new pesto and to make, dare I say, the perfect pesto. 
If you haven’t tried pesto, or if you’ve only had it as a sauce on pasta, you are missing out. It is simple to make, but seems gourmet, and it’s packed with flavor and nutrients. 
Pesto is perfect on bread, as a dip, or even just by the spoonful. Try today’s recipe and save some (if you can stop yourself from eating it all) for tomorrow’s fun and fantastic recipe 😉

Perfect Pesto:

1 cup basil
2 tbsp olive oil
1 lemon, juiced/squeezed
1 tbsp parmesan cheese (vegan works too!)
1 tsp nutritional yeast
1/4 cup almonds
pinch of sea salt
water, if needed, to thin it out
Add all ingredients to your blender or food processor and blend until smooth.
