Almond Butter Cookie Bites

Some days, you just need a cookie. A little bite of heavenly goodness to lighten up your day, whether the sun us shining bright or the rain is falling hard. At times, a cookie is all you need to make the world right again.

And a tall order like that calls for a healthy and delcious morsel like this: the Almond Butter Cookie Bite.

This tiny little wonder is full of healthy fats and protein from almond butter and chia seeds. It is vegan, gluten free, and guilt free.

AB cookiesAlmond Butter Cookie Bites:

1/2 cup almond flour

1/2 cup coconut flour

1/2 cup almond butter

1/2 cup coconut sugar

1 tbsp maple syrup

1 tsp baking soda

1 tbsp coconut oil

1 tsp vanilla

1/2 tsp cinnamon

1 chia egg (1 tbsp chia seeds, 4 tbsp water)

pinch sea salt

Preheat oven to 350 degrees. In a small bowl, combine chia seeds and water to create chia egg. Set aside until ready to use. In a medium bowl, combine flour, salt, and baking powder. In a larger bowl, add together sugar, maple syrup, melted coconut oil, coconut sugar, vanilla, and cinnamon. Blend together and add in chia egg and almond butter. Add in flour mixture slowly and blend again until smooth and forms cookie dough. Scoop into balls and place on a greased cookie sheet. Press in a criss-cross pattern with a fork and bake for 8-10 minutes. Allow to cool and enjoy!
