Best Ever Cole Slaw

Serves: 8 servings
- ¾ head green cabbage
- ¾ head red cabbage
- 1 large carrot
- 2 cups vegan mayo
- 2 tbsp rice vinegar
- black pepper to taste (approx ¼-1/2 tsp)
- salt to taste (1/4- ½ tsp)
- Shred cabbage and carrot (I used a food processor for easy shredding)
- Add to a large bowl with mayo, vinegar, pepper and salt.
- Mix until thoroughly combined.
- Taste and adjust as needed.
- Store in your refrigerator and enjoy!
