Coconut sweet potato fries – light on the fry, big on the taste.
This version contains very little oil, but huge amounts of flavor. Coconut oil withstands high amounts of heat, so you can cook these fast without saturating them in oil. You just get the crispiness and the full flavor.

Coconut Sweet Potato Fries:
So easy. So tasty. So good for you.
1 sweet potato, peeled
1 tsp coconut oil
Himalayan sea salt to sprinkle
Sliced sweet potatoes into ¼ in chi thick, 1 inch wide strips. Coat pan lightly with coconut oil and heat over medium-high heat. Place sweet potatoes in pan. Sprinkle lightly with sea salt.
Allow to cook for 2-3 minutes. Flip, sprinkle lightly with sea salt, and cook on this side for 2-3 minutes. Repeat on all four sides (as much as possible).
Serve and enjoy! These fries are light, tasty, with a hint of coconut.
