Have you ever looked in the fridge and thought, “uh-oh, there is nothing to eat?” and you search through the pantry and the fridge drawers, you pull out some random items that would never think to put together, and then you end up with a delicious meal? That happened to me recently. I had a Costco sized bag of carrots, some rice noodles, a small clump of kale, some frozen green beans, and a whole lot of nothing else. Put them together with a little sauce and seasoning, and I had quite the yummy dinner.
The key here is to step outside the box. Often times, we get so used to doing the same things, eating the same foods, and following the same daily routines. Now, there is nothing wrong with this – it’s safe, it’s comfortable, and it’s easy. But what if there was something else, something you might also love, something that would refresh you and bring a sense of liveliness to your life? Sometimes you have to step outside the box, just a little passed your edge, and see what might be waiting. It can be something huge, or it could be something small – like a fantastic new meal. Either way, it has sparked something new.
Veggies and Rice Noodle Adventure
It’s nothing too crazy, but it might be just different from your usual stir-fry, that it sets off a spark in you 😉
6 oz cooked (or precooked) rice noodles
1 large carrots, peeled and sliced lengthwise into eighths
1 bunch kale
¼ frozen green beans
1 tsp reduced sodium tamari
1/tsp agave
1 tsp rice vinegar
1 tsp sesame oil
1 tsp garlic powder
1 tsp ground ginger
Sprinkle with sesame seeds as desired
Boil noodles according to package directions. Heat sesame oil over medium-high heat in a sauté pan. Add carrots and green beans. Cook until slightly soft. Add kale and cooked until slightly wilted. You want all the veggies to be cooked, but not overdone – a little crunchy is just fine. Add seasonings and stir. Drain and rinse the rice and add it to the veggies. Mix together and serve.
