Yesterday I found myself finished with work by about 12 and not much else to do for the rest of the day. Sure there were little things like dishes and laundry, but no big projects. The blog was already posted, I had been to a work meeting, taught two classes, and even had caught up on my tv shows I missed when out of town.
So what to do?
I googled a few things on the internet. Worked on a huge pile of laundry from our mini-weekend vacation. Emptied out the fridge. Broke the garbage disposal and clogged the sink. Desperately tried to unclog the sink. Remembered how sore my arms were from barre class today. Gave up and decided to create instead.
And all of this meandering led to the realization that I had a HUGE bag of apples and large (3) variety of gluten-free flours to play with. So I got to baking. Not a pie. Not a crisp. Not even a cobbler. I decided to make two separate dishes. Apple Butter (coming soon!) and Gluten-Free Bread. Both came out f-a-n-t-a-s-t-i-c!
I was so excited with the creation of the bread that I thought I’d share the recipe for you today.
Now a couple of things.
1) I know that some of these ingredients are on the not-so-healthy list, but bear with me, I’m still learning the ins and outs of this bread.
2) Bread making is not my strong suit. Juicing is 😉 So I use a breadmaker to make things a bit easier and more standard. That being said, this recipe will also call for a breadmaker, but if you don’t have one, and know how to make bread, you can adjust it (I have no idea how) to bake in the oven.
Homemade Gluten-Free Vegan Bread:
1 3/4 cup water
2 tbsp coconut oil
2 tbsp agave nectar
1 chia egg (1 tbsp chia seeds and 3-4 tbsp water)
1 yeast packet
2 cups sorghum flour
1 cup brown rice flour
1 1/8 cups potato starch
1/8 cup xantham gum
Add water, egg, oil, and nectar to your bread pan. Pour in flours and xantham gum. Dig a tiny hole into the top of the flour, without releasing the water. Pour the yeast into it. Set your timer for standard bread (3 hours) with a light crust – this will help prevent any dryness. Sit back, relax, and let it do its thing.
Serve warm with some Earth Balance butter or a nice spoonful of apple butter (recipe coming soon!).
