Finally, here we go, Part 2 of the Vegan, Gluten-free Vanilla Cupcakes. This week, it’s all about the frosting. But first – let’s talk contests!
You may have seen in on Facebook/Twitter/Pinterest that I have been invited to enter into the Better Recipes Best Blogger Recipe Ever contest. Here’s how it works. Each month, they hold a recipe for bloggers to a recipe from a specific category. The blogger enters their recipe, send it out to all of you k,a nd you all head over to cast your vote! The winner receives a prize, including a publication in a major magazine.
This month is appetizers. I have entered a new and improved version of my coconut sweet potato fries with a brand new cinnamon dipping sauce.

Now onto the frosting…
Vegan Vanilla Frosting:
1/2 cup coconut milk (Pure coconut milk form a can would probably work best here, but I used what i had on hand -vanilla, sweetened)
1/2 cup agave nectar
3 tsp arrow-root powder – I used potato starch because I was out or arrow-root. It works well, but make sure you blend it thoroughly because it will get lumpy.
1/2 tbsp water
3/4 cup coconut oil
sprinkle Himalayan sea salt
Heat agave, coconut milk, and sea salt to a simmer for 10 minutes. Combine arrow-root powder/potato starch with water. Stir until they form a lump-free paste. Add to the agave mixture. Whisk and bring it to a boil. Remove from the heat and add in the coconut oil (not melted). Blend together with a hand blender or stand up mixer. Refrigerate for an hour or two. It will look brownish going in, but will turn white as it solidifies. when ready to use, whip once again and spread onto cupcakes.
This is not your traditional frosting, but it might be a little healthier than the standard powdered sugar and shortening variety. I’m still looking for my perfect healthy vanilla frosting though. If you have once – leave a comment below!
