Calorie Free, Sugar Free, Fat Free – not my style. They usually mean they are missing all the thing that made it taste good, and a ton of processed junk was added in to make it taste good again. The only kind of “free” I like in my food is Guilt-Free…and I guess if it’s just free in general…
So what if Guilt-Free? It’s food that you can eat and not worry about chemicals, processed ingredients, calories, carbs, fats, etc. It means food that is healthy, tasty, and energizing.
It means guilt-free gourmet.
This week, I was wanting something fancy. Something different. Something delicious. Something gourmet without the heaviness. And then I had an idea. I could grill something, Make it taste fresh and spring-like. And it worked.
Grilled Romaine Hearts with Lemon-Tahini Dressing
Serves approximately 2
1/8 sweet onion
1-2 lemons
2 romaine hearts, cut in half lengthwise
1-2 tbsp tahini
1 tsp Dijon mustard
1/8-1/4 water (thin out as preferred)
Salt and garlic powder to taste
Heat stove top grill on high. Place onions on grill for about 3 minutes. Add romaine and lemons – lemon juice squeezed into the blender for the dressing. Grill romaine on stovetop, approximately 2 minutes on each side. While grilling, add the rest of the ingredients into the blender. Blend until smooth and thin in texture. Use salt and garlic to taste. Remove romaine, onions, and lemons from grill. Add salt and garlic powder if you prefer. Squeeze lemons again over the romaine. Drizzle with dressing. Serve it up.
No guilt, just gourmet.
Peace and love,
Jessi
