Sounds complex doesn’t it? Sounds fancy right? Well, this is about as simple as it gets. To be honest, lunchtime used to be my nemesis. I never knew what to make, because the thought of eating the stale or soggy lunch I had packed for work made me cringe. And I couldn’t go anywhere to buy lunch, because we weren’t supposed to leave AND there was nothing nearby. But now that I am usually home for lunch, I enjoy it so much more.
And then there are the days where I am starving and it seems like we have run out of my normal lunchtime staples. Enter the black bean stuffed avocado. I looked around or something healthy, something green(ish), and something easy. I found black beans in the pantry and an avocado on the counter. Perfect! And so, so good.
Black Bean Stuffed Avocado:
1 avocado, sliced in half, seed removed
½ can of black beans
2 tsp chili powder
2 tsp garlic powder
1 tsp cumin
½ tsp cayenne
½ tsp curry
Salt to taste
2tbsp water
Nutritional yeast (to sprinkle)
1 tbsp salsa
Drain and rinse black beans. Heat over medium high heat. Add in spices and water. Stir until heated all the way through. When finished cooking, scoop into avocadoes, where the seed used to be. Top with nutritional yeast and salsa. Voila! Super easy (and super yummy) stuffed avocado!
