I’m Baaaack!
I just got back to civilization after a week in the mountains of Maine with my family. No signal. No electricity. Just pure quiet and the chance to connect back to nature. It was absolutely amazing.
And as sad as we all were to leave, I am just as happy to be able to connect back to all of you! And since we didn’t have too many choices of things to cook with, I will be starting back with just a few recipes and workouts for you. We still aren’t completely back to our home yet – we are spending a little time in Boston first.
Now back to the food. Before we left, I wanted to make some easy dishes that were healthy, but left me with plenty of time to pack and get some work done. I decided pasta would be the way to go. But here’s the thing – I don’t eat pasta often. It always seems a bit heavy. When I do eat it, I like to pair it with a veggie filled, fresh sauce, such as a pesto, to up the nutritional factor.
This is a twist on the traditional pesto, using some super foods and a few different ingredients to give you a light, fresh, tasty pesto sauce.
Trust me when I say, this one tastes better than it looks ๐ Maybe I should’ve saved this one for a Halloween post…
Hemp Seed Pesto:
1 cup basil leaves
1/2 cup spinach
1 tbsp olive oil
1 fresh squeezed lemon (juice)
1 tbsp hemp seeds
1 tbsp nutritional yeast
1-2 garlic cloves, or garlic powder to taste
1-2 tbsp water
salt and pepper to taste
Add all ingredients, except the water, ย to a blender or food processor. Blend until smooth. Add water as needed to thin the pesto. You want it thinner than a smoothie, but not runny.
Top you favorite pasta with the sauce and enjoy!
This is also great on toast or as a dip for some crackers or a spread on a sandwich. Feel free to play around with the ingredients, adding in or substituting other ingredients.
