Reubens and burgers. They’re the stuff Diners are made out of. But they aren’t traditionally viewed as a healthy option.
When we were on vacation earlier this summer, we stopped at a diner in Cambridge, Mass that was 100% vegetarian, mostly vegan, and had a gluten-free menu as well. It was like I had died and gone to veggie-diner-heaven. We both ordered two meals, because they had omelets AND sandwiches we could eat.
And we knew we were going to be in the car for a few more meals at least. I ordered the reuben, and it was delicious. And I thought,this would be pretty easy to recreate in a few different ways at home.
Hence the Reuben Veggie burger.
Now, I used a store-bought veggie burger (soy-free, gluten-free, all veg-tastic), but if you have a homemade recipe, go for it! My last try at homemade veggie burgers tasted much like Peanut Butter – but they were made from lentils. Go figure. So for now I stick to store-bought ones.
The rest of the recipe is quite simple, very delicious, and super satisfying.

DIY Reuben Veggie Burger:
Makes enough for 2, with some extra dressing/sauce leftover
1 cup vegan mayo (I use soy-free)
1/4 onion chopped
1 tsp fresh parsley
2 tsp capers
1 tbsp ketchup
1 tsp sriracha hot sauce
1 tsp dijon mustard
1 tsp vegan Worcestershire sauce
sea salt to taste
1 cup sauerkraut
2 veggies burgers
2 sprouted grain buns
*optional daiya mozzarella or cashew cream spread
Cook your veggie burgers and heat up the buns (I heat mine on a pan in the stove). Add vegan cheese or cashew spread a few minutes before finished cooking. While cooking, blend together vegan mayo, onions, capers, dijon mustard, salt, ketchup, hot sauce, and Worcestershire. Start assembling once burgers are cooked. Stack each burger with sauerkraut, spread sauce on the bun and stack it up. It’s savory, delicious, and quite a bit healthier than the traditional reuben or diner burger!
