DIY: Chocolate Almond Cups

Happy DIY Friday!

I’ve got a yummy, delicious recipe for you this week, because sometimes, you just need a sweet treat. And luckily, this one takes no baking, minimal cooking, and just some refrigeration time. It’s full of healthy ingredients, just enough of an indulgence, and a lot of deliciousness. 

Chocolate Almond Cups:

Makes 6 servings

Filling:

1 cup chocolate chips

1/2 cup dark chocolate cocoa powder

1 cup vanilla coconut milk (or plain with 1 tsp vanilla extract)

sea salt

Crust:

1 cup raw almonds

2 tbsp maple syrup

1 tsp cinnamon

 

For the filling, double boil the chocolate to melt the chips. Add in half of the coconut milk and which it in to the melted chocolate. Add in the powder and whisk more. Add in more coconut milk. Remove from heat.

In a high-powered blender, blend the almonds. Scrape the sides of the blender and add in the maple syrup and cinnamon. Blend together.

Remove from the blender and divide into 6 parts. Place in the bottom of a muffin tin or small dish.

Almond Crusts

 

Pour chocolate filling on top. Sprinkle with sea salt and refrigerate for at least an hour. Chocolate Cups

 

Keep refrigerated until ready to eat.
