Speaking of new stuff, I recently purchased the cutest little kitchen tool. It’s a sauce pan that I use to reheat my tea – rather than sticking it in the microwave – since I have a bad habit of making tea when I don’t really have time to drink it.

It is also a very useful as a sauce pan. Which I used to whip together some healthy vegan queso last night for a quick snack.

Cheezy Vegan Queso

Cheezy Vegan Queso:

Makes 1-2 servings, depending on if you like to share ๐Ÿ˜‰

1 tbsp earth balance butter or coconut oil

1/2-1 cup nutritional yeast

1/2 cup vegetable broth

1 tsp chili powder (more if you want it super spicy)

1 tsp garlic powder

1/4 tsp sea salt

Heat the butter/oil on high until it starts to melt. Add the veggie broth and heat. Whisk in the nutritional yeast and spices until it starts to blend and get creamy. Remove from heat and enjoy with your favorite chips or pour over some chickpea tacos!
