DIY: Hearty Dinner Rolls (Vegan and Gluten Free!)

Oh folks, its been one of those weeks. Super busy, Murphy’s Law, and the such: Camera’s and batteries malfunctioning, toes breaking. You know – the usual. But even with all of this, there has been some really good and fun things this week too.

One of the high points of the week was these rolls – soft, warm dinner rolls. Perfect for Thanksgiving, Sunday dinner, or any meal of snack time! And my favorite part about these is that they are vegan, soy, and gluten-free! And super easy to make.

I used to make these with whole wheat and all-purpose flour (adapted from Oh She Glows), but after discovering gluten was not digesting well, I haven’t been able to have them! Luckily, with the right blend, these turned out delicious! I might even enjoy them more than before πŸ˜‰

DIY Hearty Dinner Rolls (Vegan and Gluten-Free):

Makes about 8-10 roll

1 cup potato starch

1 1/2 cup sorghum flour

1 tbsp xantham gum

2 tbsp turbinado sugar/organic sugar

1 tsp himalayan sea salt

1 pack (2 tsp-ish) active dry yeast

1 cup warm water

2 tbsp soy-free Earth balance (vegan spread), softened

1 flax egg (2 tbsp ground flax seed with 4 tbsp water)

Add the active yeast pack, warm water, and 1 tsp of sugar together – it might bubble a bit or smell like bread, this is good. It means it is still active. Mix together sugar, flours, salt, and yeast in a large bowl -0 use a mixer if you have one or stir and knead with your hands. Add in the warm water, flax egg, and softened butter. Continue mixing. Form into a dough ball and cover with a towel. Let it sit in a slightly warm place to rise for 30 minutes.

After 30 minutes, form into smaller balls (about 8 or 10) and place them together in a (greased or sprayed) pie pan. Let the dough balls touch. Cover again and rise for another 30 minutes. Preheat oven to 400 degrees. Uncover your rolls after 30 minutes and bake for 15-20 minutes. You can also glaze the tops with a little melted vegan butter before cooking.

These are soft, chewy, and oh so delicious!
