Healthy Chocolate Chip Cookies

I’ll be completely honest with you. I ate about 6 of these yesterday. Yup, half a dozen all to myself. And I don’t feel bad about it at all because these are some of the healthiest cookies I’ve ever made. And they tasted pretty good too πŸ™‚
They are gluten free and vegan, which means I used whole grains (just not wheat), coconut oil instead of butter, coconut sugar, and chia seeds instead of eggs. And my chocolate chips are made of sustainably sourced chocolate, making them healthy and all-around guilt-free πŸ™‚

Healthy Chocolate Chips Cookies:

3/4 cup coconut oil

1/2 cup coconut sugar

2 tbsp molasses

1 chia egg (1 tbsp chia seeds and 4 tbsp water, mixed together until firm or gooey)

1 tbsp pure vanilla extract

1 tsp baking soda

1/2 tsp salt

1 cup sorghum flour

1 cup teff flour

2 cups chocolate chips

Preheat oven to 375 degrees. Add coconut oil and coconut sugar to a large mixing bowl. Beat with electric mixer to thoroughly combine. Add in molasses, chia egg, and vanilla extract. Continue to mix together. Slowly add in flour, salt, and baking soda. Mix until it form a dough. If it is crumbly, add in a splash of water. Mix in chocolate chips. Line 2-3 cookie sheets with parchment paper or grease with coconut oil.

Scoop a spoonful onto the pan using an ice cream scoop. Bake for 12-15 minutes until slightly firm.

*Because of the flour color and molasses, these cookies are a bit darker in color than you usual cookie, and a bit more cake-like in texture.

Serve with a cup of almond milk or a chai latte and enjoy!
