Wednesdays are my super busy day. I teach two classes, back-to-back starting at 8am, then head to work for the afternoon, and then teach a class in the evening. It’s a long day, but it’s worth it. The only problem – finding something quick but energizing for breakfast. Since I have to be up and out of the house for quite a bit of time, I need something a little more substantial than my usual green juice. Also, after making DIY Almond Milk, I wanted to use it in a recipe. I searched around and realized we had the ingredients to make one heck of a delicious smoothie. I had plenty of greens, some frozen fruit, and a mango hanging around. And it was the perfect excuse to use my brand new high speed blender (ninja Professional 1100 watts – if you can’t afford a Vitamix or Blendtec at the moment, this is a great option). It came out creamy and delicious.
Blueberry Mango Magic Smoothie:
The base is green, but you would never know. It’s like magic! Makes 2 servings
1 cup frozen blueberries
2 frozen bananas
½ fresh mango
1 cup DIY almond milk
2-3 Handfuls of kale
½ cucumber
Agave to taste (optional)
Blend all ingredients until smooth.
You can also play around with some ingredients. Maybe add some spinach or other berries, or try them unfrozen. The fruit masks the taste of the greens. You could even give this one to the kiddos and see if they can tell 🙂 Play around, see what happens and enjoy!
