In another search around the kitchen for some grub, I found tempeh, some veggies, and some spices. And so the tempeh scramble was born.
And it was a delicious, way to start the day!
Tempeh Scramble:
Makes enough for 2 servings
1 package of tempeh, cut into cubes
1 small green bell pepper
1/4-1/2 sweet onion
1 cup spinach, chopped
1/4 cup water
olive oil for pan (about 1-2 tsp)
turmeric, nutritional yeast, garlic, and sea salt to taste
Chop onions, peppers and spinach. Heat olive oil over medium-high heat. Add tempeh to the pan. Cook for about 2 minutes. Then add onions and peppers. Cook for another 2 minutes. Add spices and water. Cook an additional minute tor two.
Easy and delicious. Makes a fantastic breakfast when paired with green juice, toast, or some avocado slices.
