All you need is three simple ingredients: vegan creamer (soy or coconut work best), frozen blueberries, and agave (if you even need it!)
Vegan Blueberry Ice Cream:
1 cup blueberries, frozen
¼ cup creamer
Agave or sugar to taste
Add all ingredients to a blender. Blend until thick and scoopable, but not chunky, like ice cream. Add more blueberries or creamer to reach desired consistency. Taste and blend with sweetener if needed, it all depends on your taste buds and the blueberries!

May 28, 2013 at 11:05 pmLy and I made blueberry ice cream a few weeks ago. We went the frozen banana and frozen blueberries route but it was still good. We took the blender into Levi’s room because he was sleeping in the living room and we didn’t want to wake him up. Ly made it by herself. She hit the buttons on the blender then went and hid behind the rocking chair because the noise scared her.
