Some days, you just need a quick lunch you can throw together, feel good about it, and enjoy eating. On the days where I roam around the kitchen, wandering back and forth between the pantry and the fridge, I usually end up making this. It’s like for those minutes I wander, I know there is a good option, I just can’t seem to think of it. And then it hits me. Chickpeas, cucumber, onions, vinegar, yum.
And it really is as simple as that.
Chickpea Cucumber Salad:
1 can chickpeas, rinsed and drained
1/2 cucumber, de-seeded and chopped
1/8 onion (just a tbsp or so) chopped
Balsamic Vinegar to drizzle
Open can. Drain and rinse. Chop veggies. Assemble into a bowl. Drizzle on desired amount of vinegar. Mix together and eat. Lunch in under 5 minutes.
