Tomato Basil Toast 2 Ways

I have made several half-assed attempts at growing a garden. One time I grew cucumbers but had no idea because they were hidden under the vines under some bushes. Another time I never got around to planting it after I set up the entire raised garden. And somehow I always manage to kill the herbs I buy when they are in their own planter.

But somehow, someway, I have one herb box that grows and grows and grows – without me coming near it for the most part. I noticed the other day that my annual basil plants had sprouted and grown tremendously. I decided to put them to use in a breakfast dish, which I tried two ways.

It’s a simple breakfast toast with fresh basil and tomato, on top of either daiya cheese or a cashew cream spread. Either way it;s topped off with garlic, sea salt, and balsamic vinegar.  Every time I made it, my tastebuds wanted more.

Try it both ways and see which one suits you!

Tomato Basil Toast – Two Ways:

Makes two servings, in case you want to share or in case you find yourself in need of a second helping 😉

2 pieces of rye sprouted grain bread

1/2 cup basil, sliced

10 grape tomatoes, cut in half

1 tsp garlic powder

1/4 tsp salt

1 tbsp balsamic vinegar

Either 1/2 cup mozzarella daiya cheese OR 1/4 cup cashew cream spread *(see recipe below)

Turn broiler to high. Place your bread in the oven directly on the rack. WHen it browns, turn over until it is lightly toasted. After the second side starts to toast, remove the bread from the oven and place in a casserole dish. Spread or sprinkle cheese on the toast (the lighter toasted side). Send it back in the broiler for a minute to let the cheese melt. Top with basil and tomatoes. Add garlic and sea salt. Return to the heat for 1-2 minutes. Drizzle with balsamic vinegar and enjoy!

Cashew Cream Spread Recipe:

1/2 cup raw cashews, soaked in water for at least one hour

1/4 tsp sea salt

1/2 tsp garlic powder

1-2 tsp water

Add cashews and spices to a blender. Start with 1/2 the water. Blend until smooth and spreadable, adding more water as needed.

Either way you decide – this recipe is an oh-so-good way to start your day!
