Phew, after a few weeks away from writing, I am officially back. I hadn’t intended for it to be such a long break but sometimes life has other plans and you have to embrace them and take a different path.
I had planned on taking a few days off a couple of weeks ago as a bit of a Work/Stay-cation. The hubby had the week off from school and work, so we took a few days off to get away. We had to stay pretty close, since we had a sick cat, so we rented a hotel room nearby at a new hotel and pretended we were on vacation. We ate at a few new restaurants, went to the beach, and relaxed by the pool. I also took the time to film a few videos for the launch of my upcoming program, 21 Days to Flourish over at JessiAndricks.com.
While I had planned on getting right back at it last week, I just couldn’t do it. On Monday, our cat became very ill and passed away. She was 20 years old, so we knew it was coming, but it was still so very hard. My brain felt like it was barely functioning (and I still have a few moments where I feel like its not quite firing all the way), so thinking of a post to write, a recipe to cook, or even just shopping for food wasn’t really happening. Writing, even recipes, requires a bit of openness and vulnerability that I just couldn’t handle.
But now, things are a bit better. Regular life and schedules are resuming and life is getting a little bit back on track. I’ve been cooking up a few new recipes, or blending in this case, and starting to write for my new smoothie recipe book, due this summer.
So thank you for all your patience.
I know I wasn’t going to share any more smoothie recipes, but then I stumbled upon the glory that is Smoothie Bowls. This bowl was one of my first trials, and while it was absolutely delicious and worthy of a post here, I have a few more tweaks to make before it ends up in my book.So what is a Smoothie Bowl? It’s kind of a deconstructed smoothie, similar to cold gazpacho or a smoothie version of cereal. All the things you might want to add, but that might not blend well, can be used as toppings for your thick bowl of smoothie.
Plus, this version is full of greens, which make it filling, lean, and perfect for St Patrick’s Day!
This smoothie bowl contains plenty of protein and healthy fats, from hemp seeds, avocado, and even chia seeds, as well as energizing carbs from the frozen bananas. The kiwi and orange brighten it up a bit, balancing out the creaminess from the avocado. It’s a much healthier way to start a holiday that is usually filled with less healthy fare aka green beer, corned beef, and green icing galore.
- 2 frozen bananas
- ½ avocado
- 2 cups spinach
- 1 cup unsweetened, vanilla almond milk
- 2 kiwis
- ½ orange
- 2-3 tbsp hemp seeds
- 2 tbsp chia seeds
- Add avocado, bananas, spinach, peeled orange and almond milk to your blender. Blend until smooth, but thick. You can add more or less almond milk to reach your desired consistency.
- Pour into 2 bowls and prepare your toppings.
- Peel and slice kiwis to add to the top of your bowl.
- Sprinkle on hemp seeds and chia seeds.
- Grab a spoon and dig in.
