Black Bean and Sweet Potato Bowl

So far in the House of Healthy recipe world, I’ve shown you a black bean and sweet potato wrap, a black bean stuffed avocado, and even a black bean Buddha bowl. Which is why today I am sharing with you a combination of all three. It’s part a love for all fo these foods, and part looking around the kitchen to see what I could possible throw together for a somewhat quick lunch. Sometimes the craziest, most thrown together creations are the most magical 😉 This one might not be magical, but it is pretty darn tasty.

Black Bean Sweet Potato BowlBlack Bean and Sweet Potato Bowl

Makes about 2 servings

1 can black beans

1 large sweet potato

1-2 avocadoes

1/4 cup salsa

1/4 cup vegetable broth

2 tbsp nutritional yeast

2 tbsp chili powder

1 tsp ground ginger

1 tsp garlic powder

1/4 tsp turmeric

1/2-1 tsp himalayan sea salt

1 tbsp olive oil

Peel and cut your sweet potatoes into 1 inch cubes. Steam until soft. While cooking, heat olive oil in a large skillet over medium-high heat. Drain and rinse your black beans and add to your skillet. Pour in vegetable broth. Add in sweet potatoes. Mix together. Add in nutritional yeast, spices, and salt. Stir together until some of the liquid is absorbed and the sweet potatoes and beans are covered in spices. Add shredded kale and stir. Add in salsa and cook the mixture for 1-2 more minutes.

Remove from heat, place in a bowl and top with avocado (whole or half). Serve with some healthy chips to scoop up the blend of flavors and enjoy!
