Gourmet at Home: Kale and Butternut Squash Pizza

After posting mainly breakfast recipes for the past few posts, I thought I would switch it up and give you a gourmet-gone-easy dinner. While I have also been sharing a lot of pies lately, this is a pie of a different style, and a fun way to get some fall, seasonal vegetables on your plate. Plus, its a pizza, which is one of my top favorite foods.

The problem with pizza is that it gets a bad rap, and most of the time it should. It is easy to load it with unhealthy ingredients to make it taste good, but its even easier to load it with healthy ingredients that taste phenomenal.

It’s also easy to make at home so if you have any allergies or food restrictions, you can still fully enjoy it.

We usually have pizza night once a week, sometimes homemade, sometimes an organic frozen one for a “splurge” night, or sometimes out at a local pizza joint. Since I eat gluten free, we have limited options for eating out and frozen, which means we often end up with plain cheese and spice it up at home. We’ll throw on veggies, basil, sundried tomatoes and make it more gourmet. While reaching for our regular cheese version last week I saw a kale, squash, and goat cheese pizza next to it. I crossed my fingers, looked, and realized, nope, it wasn’t gluten free. But it seemed easy enough to make at home.

And it was!

It’s a simple crust, a blend of organic cheese, some greens and roasted squash.

Kale and Butternut Squash Pizza

Ingredients
  • 1 cup all-purpose gluten free flour
  • ⅔ cup water
  • 1 tbsp baking powder
  • 1 tbsp olive oil
  • 2 tbsp organic sauce (your choice)
  • ¼ cup organic mozarella cheese
  • 2 oz goat cheese, sliced into circles
  • 1 cup kale, chopped
  • ½ cup roasted butternut squash, cut in chunks
Instructions
  1. Preheat oven to 425 degrees.
  2. Cut a butternut squash in half, scoop out the seeds, and place face down in a roasting pan with enough water to cover the pan. Roast until you can pierce with a fork. It usually takes about 35-40 minutes. You can do this ahead of time and store in the refrigerator.
  3. In a large bowl, combine flour, water, and baking powder. Mix and knead it together with your hands until it forms a ball of dough, It should be dry, but not flaky. Sprinkle a little flour on your pizza sheet and roll out onto your pizza stone/sheet. Pop in the oven for 15 minutes and get your toppings ready.
  4. Once your crust is finished, remove from the oven. Top with 1 tbsp olive oil and spread it over the crust. Add your sauce and mozzarella. Top with your kale and butternut squash. Add your goat cheese rounds. Place back in oven for another 12 minutes. Slice into 4-6 pieces, depending on how big you like your pieces.
